Abstract

Rice bran extracts is not only rich in soluble fiber, but also contains many nutritional ingredients which support for growth of microorganisms. The purpose of this research is determined effect of rice bran extracts to activities of probiotics bacteria. The results shown that the rice bran extracts has good effected on increasing biomass of Lactobacillus acidophilus A1, Bifidobacterium bifidum A2 and Lactobacillus bulgaricus A3 was lower. The level of biomass reached 2.5×108, 3.4×108, 5.9×107 (CFU/ml), respectively. The produced activities of lactic acid, extracellular enzyme and antibacteria have increased. The level of lactic acid reached 40.5, 37.8, 26.2 (g/l), respectively; amylase and protease activities reached 23, 22, 7 and 26, 24, 10 (mm), respectively; Antibacterial activity reached 6, 3, 1 (Tested Strains), respectively.
